Sleeping Lion Farm is a grass-fed beef farm in the Cooperstown area where cattle are moved to fresh pasture every day during the grazing season, which can run from May to November in central New York. The system is called management intensive rotational grazing, and it shapes everything about how the beef is raised.
Because the cattle only eat grass and use plenty of energy moving around, they gain weight more slowly than conventional cattle, and their older age adds flavor to the beef. All the beef is raised on the farm and processed at Empire Custom Processing, a USDA-licensed facility about 20 miles away. A farm store carries the products.
