Toss & Fire Camillus, Inc. is part of a Neapolitan-inspired wood-fired pizza concept that started in 2015. The pizzas bake inside imported ovens from Modena, Italy, which run at about 1,000 degrees, so each pie is done in a minute or two.

The concept has two restaurant locations plus food trucks around Central New York, so the oven’s flavor travels. The Camillus restaurant serves a town best known for Camillus Erie Canal Park and the old canal’s Nine Mile Creek Aqueduct.
