Eleven Waters is a bistro in downtown Syracuse inspired by the Finger Lakes wine region. It pairs a modern but rustic setting with local flavors, and it serves breakfast, lunch and dinner, from a sunny morning meal to a street-side lunch to an evening with a glass of local wine.

The bar is carved into the hotel’s historic barber shop, and the cocktails nod to that history with names like The Pompadour and The High & Tight. The drinks list features New York spirits and craft beer, and wine flows from the tap. Entrees are planned with a Finger Lakes wine pairing in mind.
